Snowman Cupcakes

 
 Now that Thanksgiving is over and we can offically focus on Christmas I thought I would share a simple but festive treat. Just pick your favorite cupcake and frosting combination and top with this adorable snowman. These would be great to make with kids and serve at their class holiday parties. I myself brought them to work and they were a big hit there too.

Snowman Cupcakes

To assembe the snowman cut a slice off the top of one marshmallow and attach it with frosting to a second. Attach the Junior Mint hat with frosting as well. For the eyes, using a wet toothpick, poke holes in the smaller marshmallow and insert chocolate sprinkles. The nose is made from orange DOTS cut into strips. Place him on top of a frosted cupcake.

Chocolate Cupcakes

3/4 c unsweetened cocoa powder
3/4 c all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
3/4 c unsalted butter, room temperature
1 c sugar
3 large eggs
1 tsp vanilla extract
1/2 c sour cream
 
Preheat oven to 350F degrees.
 
Sift together cocoa, flour, baking powder, and salt; set aside. In a mixing bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each, then beat in vanilla. With mixer on low speed, add flour mixture in two batches, alternating with sour cream and beginning and ending with flour.
 
Pour batter into muffin tin cups, filling each 3/4 full. Bake 20 to 25 minutes.
 
Cool in pan 5 minutes; transfer to a wire rack to cool completely. Frost and decorate.
