Here is a simple salad perfect for any summer bbq.
I served this with Grilled Veggie Stacks and cheesy polenta.

Serves 6
2 cans chickpeas (garbanzo beans), drained
1/2 red onion, chopped
4 cloves garlic, minced
1 large tomato, chopped
1/4 c. parsley, chopped
1/4 c. cilantro, chopped
5 tbsp olive oil
1 lemon, juiced
salt and pepper, to taste
In a bowl, combine chickpeas, onion, garlic, tomato, parsley, olive oil, lemon juice and salt and pepper. Chill for atleast one hour before serving so the flavors can combine.

looks refreshing! i like to add in a splash of red wine vinegar to mine too.
I have never made chickpea salad myself - I will have to start with this!
