Meal: Tortellini and Pancetta Soup and Bruschetta with Artichoke Tapenade
Tortellini and Pancetta Soup

1 tsp butter
6 oz pancetta, sliced thick
6 c. vegetable stock
16 oz frozen cheese tortellini
1 1/2 c. frozen peas
1/2 c. Parmesan cheese
In a large soup pot melt butter. Cut pancetta in a medium dice, add to pot, and cook till slightly crispy (2-3 minutes). Add vegetable stock and bring to a boil. Once boiling add frozen tortellini. They are done when they float to the top. Add peas and cook till warm, another 1-2 minutes. Add salt and pepper to taste and garnish with Parmesan cheese.

There is nothing better than a steamy bowl of soup when you are sick! The pancetta and tortellini are great additions!
