Happy Birthday BILPlzak!!! Saturday was my brother in laws 26th birthday. I had the family over for dinner and asked him to pick out any cake he wanted. He found this cupcake and requested it be turned into a cake. It was the first layer cake I ever made and I think it turned out well. He seemed to enjoy it at least.
Root Beer Float Cake

2 1/2 cups old-fashioned style root beer
2 tsp. vanilla extract
2 cups dark brown sugar
1 cup butter
2 eggs
3 cups all purpose flour
1 Tbs. baking powder
2 tsp. baking soda
1 tsp. salt
Root Beer Glaze
4 cups confectioners sugar
1/3 cup & 3 Tbs. root beer
3 Tbs. vegetable oil

Preheat oven to 350ºF.
In a bowl, mix together root beer, and vanilla extract. Set aside. In a separate bowl, cream together butter and sugar until light and fluffy. Add eggs, mix until smooth Sift in flour, baking soda, baking powder and salt. Mix with hand mixer on low, while slowly pouring in root beer mixture. Mix until smooth and lump free. Pour into 2 spring form pans. Bake for 35- 40 minutes, until golden brown and cake springs back when touched.
While cakes are baking, prepare your butter cream and root beer glaze. For glaze, put all ingredients into a bowl and mix with a whisk until smooth and lump free.
To assemble, start by letting cakes cool. Stack them on cake pedestal with butter cream in the center. Pour root beer over top layer of cake. Pour on slowly to allow root beer to soak in. Once soaked in and let sit for a few minutes, and pour glaze over top of cake and refrigerate till hardens.
OPTIONAL: When the glaze sets up a bit and isn’t too runny, put a remaining butter cream atop.
