After a resident at the building I work in brought me a large box of apples from his orchard I decided to make a baked apple salad for Thanksgiving at my dad's but I also needed a dessert to bring to HusbandPlzak's dad's house. I had never made an apple pie (and I guess still haven't really) and thought that adding the cranberry would be a nice holiday twist. I have made a couple mini pies recently and love that people can just pop them in their mouths. This time I tried with a muffin tin (rather than a mini one) and I love the size so much better. I think it is a great single portion.
Apple Cranberry Mini Pies
Adapted from AllRecipes
3 apples
1 c. whole cranberry sauce
1/4 c. packed brown sugar
1/3 c. all-purpose flour
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 recipe basic pie crust
Preheat oven to 350F.

Preheat oven to 350F.
Spray muffin pan and line each cup with pie crust.
Peel, core, and slice the apples. Combine apples and cranberry sauce in a medium-sized mixing bowl. Combine brown sugar, flour, cinnamon, and nutmeg; add to the apple mixture. Mix thoroughly. Turn filling into the pastry lined pan.
Bake for 45 minutes, or until the crust is golden brown and the filling bubbly.

how cute! I love the idea of using apples and cranberry sauce.
I love using my mini muffin pan and making mini pies is more fun for me than regular sized pies. Thanks for sharing - these are adorable!
