This is another recipe that I created for my 'Give Thanks' cold dinner project. I wanted to incorportae the traditional flavors of Thanksgiving in a unique way. In this recipe I made a classic meatball but used turkey instead of ground beef and cornmeal rather than breadcrumbs. This brought turkey and cornbread dressing to the meal without the stuffed bird. I made a simple pan gravy for the dipping sauce and I really think it was a success.

Turkey and Cornmeal Meatballs with Gravy Dipping Sauce

Turkey and Cornmeal Meatballs
Makes 2 dozen
1 eggs
1/4 cup whole milk
1 cups cornmeal
1/4 cup diced onion
1 lbs ground turkey
Dipping Gravy

Makes 2 cups
1 tbsp butter
3 cups chicken broth
1/2 minced shallots
3 cloves garlic, smashed
1/2 tbsp rosemary
1/2 tbsp thyme
1 bay leaves
1/2 tsp salt
2 tbsp butter
2 tbsp flour
Turkey and Cornmeal Meatballs
In large mixing bowl, combine beaten eggs, milk, cornmeal, chopped onion and salt; add meat and mix well. Shape into 1" balls. Place the meatballs in baking pan. Bake @ 375 degrees 25 to 30 minutes. Remove from pan; cool. Place toothpick in each and serve with gravy.
Dipping Gravy
In a large skillet add butter over medium-high heat. Add the shallot, garlic, rosemary, thyme, and bay leaf; season with salt and pepper. Cook until shallot is tender, about 3 minutes.
Meanwhile, make a paste with the butter and flour in a small bowl; set aside. Add the broth. Bring to a boil and whisk in the flour mixture. Boil until sauce thickens to make a gravy, about 4 to 5 minutes. Adjust seasoning, to taste. Remove and discard the garlic and bay leaf.

What a creative idea to use the cornmeal in the meatballs, being a huge turkey and cornbread fan I will have to try this!
