Green Bean Salad

This salad is so simple but FULL of great flavor. I made it in the morning before work and let it marinate all day and it turned out perfectly. This is a great option for replacing the traditional green bean casserole for the holidays with something just as tasty but much healthier.



Green Bean Salad

1 lbs green beans, trimmed
2 tbsp chopped shallots
2 tbsp chopped garlic
1/4 c balsamic vinegar
1/4 c olive oil
Salt and pepper to taste

Place green beans in a large saucepan. Fill with enough water to cover green beans, and bring to a boil over high heat. Reduce heat to medium low, and simmer 10 minutes. Drain, and let cool.
In a bowl, stir together shallots, garlic, balsamic vinegar, and oil. Pour over green beans, season with salt and pepper. Cover, and refrigerate at least 1 hour.
