I took the weekend off from cooking (but prepared this post before hand) to head out of town for my best friend's wedding at Notre Dame, IN. She was a beautiful bride and the wedding was perfect. If you ever get the chance to visit the campus or the cathedral I highly recommend it, it is so pretty. (especially in the fall) Well as this is HALLOWEEN WEEK I have decided that all the food posted on here this week will be pumpkin related. For this recipe I took a basic pumpkin bread recipe and simply added chocolate chips, seriously what is better than chocolate?
1 1/2 c. flour
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt
3tsp ground cinnamon
1 1/2 tsp ground ginger
1/2 tsp ground cloves
1/3 c. milk
1/2 tsp vanilla
6 tbsp butter, room temperature
1 c. sugar
1/3 c. brown sugar
2 eggs
1 c. pumpkin puree
1 c. semi sweet chocolate chips
Preheat oven to 350F
Have all ingredients at room temp and prepare mini loaf pan (or a 9x5).
Whisk together flour, baking soda, baking powder, salt and spices. In another bowl combine milk and vanilla. In a large bowl, using a hand mixer, combine butter until creamy. Gradually add sugars and beat on high for 3-4 mins.
Add eggs one at a time. Add pumpkin puree on low speed until blended. Add flour mixture in 3 parts alternating with milk mixture. Mix in chocolate chips by hand.
Spread batter into pan and bake one hour. (when done toothpick should come out clean)
