2/3 c warm water
1 tsp active dry yeast
1 tsp white sugar
2 c all-purpose flour
1 tsp salt
1/4 c vegetable oil, plus more for frying
2 tbsp plain greek yogurt
Whisk warm water with yeast and sugar until completely disolved. Let stand for 10 minutes.
Sift flour and salt three times then add the yeast mixture, half of oil, and yogurt. Mix into dough then knead for about 5 minutes. Place dough in a lightly greased bowl, cover, and sit for 1 1/2 hours our until it doubles in size.
Punch down dough then knead for 5 minutes. Divide into 8 pieces. Let rise for another 10 minutes. Roll each piece into 8 inch rounds.
Brush naan with other half of oil. Heat oil in skillet, pan fry naan for 2 minutes on each side until puffed and lightly golden.
